I have something to admit: I’m not a huge fan of summer. The extreme heat, sweating glistening, and humidity (read: top knot every single day), just not my idea of a fun time. Of course, if you can get away to the beach or the pool, the heat is bearable, maybe even enjoyable. But this year has been excruciatingly hot, my allergies went haywire, and I spent most of summer wishing it were fall already.
So why am I posting about summer cocktails? I thought it’d be nice to say “au revoir” to summer with a cocktail celebrating the end of it! This is probably one of the easiest cocktails you could attempt, and it’s great for a small crowd (depending of how big of drinkers you have). It’s incredibly simple:
Check out the original recipe by The Blond Cook
- 1 12 oz can frozen limeade concentrate
- 1 bottle of beer
- 12 oz tequila
- 12 oz Cherry Lemon Sundrop, or your favorite cherry soda
- Optional: lime juice, sugar, salt, maraschino cherries, lime wedges
Combine the above in a pitcher, stir until combined, and then pour in to glasses. Optional: pour lime juice and sugar or salt in to two separate shallow saucers. Dip edges of glasses in juice, then in sugar or salt. Garnish with cherries or lime wedges. I used diet cherry 7-Up, but I highly recommend trying Cherry Lemon Sundrop (if you aren’t in the south, you can purchase here – affiliate link)! I had a leftover Coors Light in the fridge, but typically use Corona in this recipe.
Are you glad that summer is (almost) over? What do you drink to cool off when it’s hot outside?
